I love this muesli bar recipe because its low in fructose and is yummy! I find takes less time to make than energy balls & you don’t have to roll each individual ball, just simply press and bake in the oven!
Ingredients for Step 1
1 cup walnuts
1 cup pepitas
¼ cup almonds
¼ cup macadamias/cashews
Step 1
Put all all of the dry ingredients into the food processor (S blade) and grind into a crumbly nut mixture.
Ingredients Step 2
¼ coconut oil (melted)
¼ cup rice malt syrup (100% fructose free)
½ cup sunflower seeds
½ cup pepitas
½ cup dried unsweetened organic cranberries
¼ cup coconut chips
½ tsp salt
1 tsp cinnamon
5 drops peppermint essential oil
Add the above ingredients to the food processor containing the crumbly nut mixture and grind (you may need to stop and scrape down the sides several times until uniform dough is formed).
Press in shallow baking tin and bake in oven for 15-20 minutes.
While still warm, slice the bars into desired sizes, then put into the fridge in an air tight container.
